    Yes, you may use vanilla extract instead of the lemon and almond. I would use only 2 teaspoons of vanilla–not 3. Thanks for asking!

    The pound cake I just made can be lemon if you substitute lemon extract in place of the almond extract. There is a lemon glaze with Betty’s Banana Bread. Thanks for viewing and commenting!

    I used self-rising flour, and this came out perfectly without those additives. If you want to use plain flour, you do need to add baking soda and salt. Thanks for bringing that up! And thanks for viewing and commenting!
